Jean's Zucchini Bread

This is my Grams' recipe and has been my favorite since I was a toddler. If I'm not careful, I can eat a whole loaf in one day! Yes...it's that good!

The best part, the recipe calls for very few ingredients and is super easy to make!

3 Eggs
2 Cups Sugar
1 Cup of Oil
2 Cups Grated Zucchini
2 Teaspoons Vanilla
3 Cups Flour
1/2 Teaspoon Baking Powder
1 Teaspoon Baking Soda 
1 Teaspoon Salt 
1 Teaspoon Cinnamon

2 Large Bread Pans (or three small ones)

Grate zucchini with cheese grater (as pictured below) - no need to peel

Mix all ingredients together in bowl and place in bread pans.

Bake at 350 degrees for 40-60 minutes (play with the time and check with a toothpick)



Viola!
